Pork Belly Sliders Made with Kölsch Beer

The Bavarian Chef Fredericksburg is one of 13 restaurants participating in the FXBG Sandwich Invitational on July 31 in Hurkamp Park.

The restaurant’s competition sandwich is a Krustenbraten Pretzel Slider.

“We used local pork belly, from Papa Weaver’s in Madison, Va., and made a Krustenbraten, a crusted roast,” Bavarian Chef owner Jerome Thalwitz said.  “We braised it in a local beer, a Kölsch from Champion Brewing Company in Charlottesville.  We made a little fried onion and a Bavarian Kraut salad that we put on top — a marinated cabbage — and topped it off with Dijon Horseradish Sauce.”

Thalwitz said sliders are common on the restaurant’s menu, but this one was made especially for the FXBG Sandwich Invitational.

“My Sous Chef Jannec (Harnig) and I were brainstorming and said pork belly is so popular right now, let’s start with that.  We built from there.  We love the flavor of the the Kraut Salad — a little caraway, lemon, vinegar, salt and pepper —  it accents the pork very nicely.”

FXBG Sandwich Invitational tickets are $25 per person and include sample-size sandwiches from all 13 restaurants and beverages.  Ashleigh Chevalier and her band will be providing live music and there will be a free photo booth by Owik Pics.  The event will be held 4 – 6 p.m. in Hurkamp Park.  Tickets are available at the Fredericksburg Visitors Center, 706 Caroline St.

The Sandwich Invitational will kick-off Fredericksburg Summer Restaurant Week, which runs August 1 – 10.  Guests can choose 2 for $20 specials at 17 participating restaurants.  A list of participating restaurants and sample menus are available online.
