Tommy Abbott Name Executive Chef at Spencer Devon Brewing

Thomas “Tommy” Abbott has been hired as executive chef at Spencer Devon Brewing in downtown Fredericksburg.

Abbott previously worked for the Neighborhood Restaurant Group in Alexandria, Va., and Washington D.C., and served as executive chef for Mosaic Restaurant, and sous-chef of Little Venice Restaurant, both in Richmond.

“Tommy has extensive training in Italian cuisine, and creates dishes with an emphasis on deconstructing simple, well-known flavors and presenting them with a unique, intensified perspective,” said Spencer Devon owner Shawn Phillips. “He will continue to source ingredients locally for the restaurant.”

“I was trained on the job, and took the opportunities given to me to learn and push myself to find new ways to succeed and grow as a chef,” Abbott said.

The fall menu is Abbott’s first for Spencer Devon, and features house-made pasta and sauces, and specials based around the brewery’s purchases from community supported agriculture (CSA) and Fredericksburg-area farmers’ markets.

About 80 percent of Spencer Devon’s ingredients come from the Fredericksburg area, Phillips said.

Abbott replaces Chef Justin Cunningham, who joined Chef Raymond Renault of Fredericksburg’s La Petite Auberge in opening Legume Kitchen and Bar in Fredericksburg.
